June:: Fresh Garden Delights at your Book Club Gathering

Hi Friends:
If you're lucky enough to have a garden then you're probably about knee deep in fresh produce right now. I know I am! One morning last week my dear husband brought in 26 cucumbers. Yes - in one day! Eeek. But like good books -- you can't have too many :)

Here's a delightful recipe for a cucumber recipe that you can use on tea sandwiches or as a veggie dip at your next gathering.
Tzatziki Sauce
Ingredients:
2 cups Low Fat PLAIN Yogurt
2 cups cucumbers - remove seeds and dice small
Chopped Basil
Chopped Dill
1 TB Minced Garlic
1/2 Lemon
Salt and Pepper

Strain the yogurt through doubled-coffee filters for two hours in the refrigerator. You'll be amazed at how much liquid drains. This will leave you with a thick custardy yogurt.

While the yogurt is draining - Peel the cucumbers and scoop out the seeds. Then dice in small chunks. Place in a colander and sprinkle with salt and peper. Let sit so they dry out just a bit.

Combine the finely chopped dill, basil with the minced garlic and the juice from 1/2 a lemon. Add the yogurt and season with salt and pepper to taste. Fold in the cucumbers.

Put in a sealed container in the refrigerator for at least an hour before serving. If water rises to the top -- pour it off, don't mix it back in.

Use on sandwiches, as a veggie dip, or as a spread on burgers. Light, refreshing and so easy.

OH - AND IF YOU HAVE LOTS OF CUCUMBERS:: Make a little tub of Tzatziki to go (or the kit to make it themselves) for each of your book club members. They'll appreciate it.

National Poetry Month

April is National Poetry month.
At this months meeting why not share your favorite poem. Not into poetry, then how about doing a round robin with the group to create your own Roses are Red variety poem. You'll get a good laugh and honor National Poetry all at the same time.

Keep your book club alive!

We're all about at the end of our dreary winter weathered ropes. I know this for certain because on the news night before last they were covering the snow ... yes again, and use to NEVER get snow ... and they were interviewing a mother who said, "I wish someone woulda' shot that darn groundhog!" I bet more than a few of us are feeling that way about now.

I had to laugh. Nothing like a live interview in the south the catch you off guard.

So, if your friends are making excuses to not get together for book club, reel them back in. If they didn't read the book, they can still be part of the girls night out and she can catch up on the next read. Sometimes all we need is a little nudge to get us off the couch and out the door on a cold, wet night --- do your friend a favor -- NUDGE!

Have a wonderful book club meeting. I'd love to hear what you're doing at yours.
